San Pasqual is the Patron Saint of Kitchens & Cooks. He was a Franciscan Monk who is known for making humble dishes with wonderful flavors. It is said that he fed the poor and the baskets he offered them were miraculously refilled. He is often depicted in New Mexican retablos, which are proudly displayed in the kitchens of New Mexican cooks. He has overseen many a frijole pot and tortilla rolling sessions.
